Use around a kilo of potatoes for 4 servings, wash, peel and cut into large pieces. Boil in lightly salted water until tender, drain and mash. Add 3 tablespoons milk, 2 tablespoons grated cheddar, a a tablespoon butter, a large egg lightly beaten and season with salt and pepper. Beat the mixture until it stands up stiffly, pile into a souffle dish bake in a moderate to hot oven until lightly browned - around 20 minutes. You can deep fry spoonfuls of the above mixture and they will puff up, excellent with crisp bacon.
